Here's a quick and so so easy recipe for delicious coconut macarons, Crunchy on the outside and soft and squidgy on the inside!

Ingredients:
80g dessicated coconut
45g caster sugar
1tsp cornflour
vanilla essence
a pinch of salt
1 egg
dark chocolate for drizzling
Separate the egg yolk from the white and whisk the white until it is light and fluffy and forms soft peaks.
Adding a few drops of vanilla essence, fold the egg whites into the dry ingredients until completely mixed.
Measure out spoonfuls of the mix onto greaseproof paper. Try to keep some height on the coconut mounds, this should ensure that the middle stays soft after cooking.
Melt some chunks ofgood quality dark chocolate, either on a pan of hot water, or in the microwave - taking care not to burn it.
Using a spoon, drizzle the melted chocolate over the macarons.
Leave to cool. Serve and enjoy!
We had some strawberries, so I used the excess chocolate sauce for dipping these!
